Bruno Aversa grew up among restaurant tables. His father Rosario worked in Salerno's restaurant trade for more than thirty years, so the kitchen was a home before it was a job. His training took him through serious kitchens, but the idea underneath stayed the one he learned as a boy: good fish should be respected, not dressed up.
At Il Gozzo that becomes a simple, demanding method. Go to the market in the morning, choose what is genuinely there, build the day around it. The printed menu stays short on purpose and turns with the seasons. The specials are the most interesting part of the evening. The cooking is gentle, there to look after top-quality produce; seasoning is just enough, and when a dish works with three ingredients we do not add a fourth.
Next to the kitchen is the cellar, and it is not an afterthought: over 300 labels chosen to sit beside the sea rather than to fill a shelf. From that meeting — a good plate of fish and the right glass — comes the name of the restaurant: a gozzo is the small, solid fishing boat you take out every day, not the one built for long crossings.
