Tra Terra e Mare — 3 courses€ 35
A tasting chosen by the chef, between the garden and the Gulf.
Salerno · Gluten free
Not a separate menu, but a kitchen set up this way: frying with rice flour only, and a boiler reserved for gluten-free pasta.
In most restaurants gluten free is a departure from the norm: someone finds a spare pan, swaps the flour and hopes for the best. At Il Gozzo the logic is reversed. No wheat flour comes into the kitchen for frying: we fry with rice flour only, for every guest, always. Every fried dish on the menu is gluten free by construction, not because somebody asked.
In an Italian restaurant the critical point is the cooking water: share one pan and everything else you did is undone. That is why gluten-free pasta has a separate boiler, reserved for it alone. Every pasta dish on the menu can be made with gluten-free pasta, at no surcharge and without ever meeting the water used for ordinary pasta. On the menu now: scialatielli allo scoglio, tuna genovese, mixed pasta with mussel cream and linguine alla Nerano.
Only 2 dishes on the menu contain gluten and cannot be adapted: bao bun with fried prawns and cantuccini with passito wine. Everything else is gluten free by composition, with the dedicated pasta or on request: the full list is below. We are not certified by the Italian Coeliac Association, and ordinary pasta does exist in this kitchen: what we can guarantee is separate procedures and a team that knows exactly what it is carrying to the table.
Practically the whole card. In green, dishes that are gluten free as they are; in amber, those made with gluten-free pasta.

Il Gozzo is not certified by the Italian Coeliac Association, and pasta containing gluten is handled in this kitchen. Our procedures — rice flour only for frying, a separate boiler for gluten-free pasta, dedicated utensils and surfaces — reduce the risk of cross-contamination to a minimum, but they do not amount to an entirely gluten-free kitchen. If you have diagnosed coeliac disease, please flag it when booking and talk to us at the table: we will tell you honestly what we can guarantee that evening.
Yes. Everything fried is made with rice flour only, and gluten-free pasta has a dedicated boiler. Only 2 dishes on the menu contain gluten and cannot be adapted: bao bun with fried prawns and cantuccini with passito wine.
Yes, and not only on request: we use rice flour for all frying, for every guest. It is a kitchen decision, not an option you have to ask for. Every fried dish on the menu is gluten free by composition.
No, there is no surcharge. Every pasta dish on the menu can be made with gluten-free pasta at the same price.
Gluten-free pasta is cooked in a separate boiler reserved for it, with dedicated utensils and surfaces. This is where most restaurants get it wrong, and it is exactly why we chose to have two boilers.
No, we are not currently listed by the Italian Coeliac Association. We do apply dedicated procedures, and we would rather tell you clearly what we can and cannot guarantee than display a badge.
It is not required, because the kitchen already works this way. It still helps: the booking form has a dedicated box, and knowing how many gluten-free covers we will have lets us organise busy evenings better.
Desserts change with the season. Ask our floor staff which ones are gluten free that evening and we will tell you precisely.
Many seafood dishes are naturally lactose free. Tell us about any allergy or intolerance when you book or at the table: the allergen book is available in the dining room and our staff are trained to guide you.
Direct booking — no commission, no credit card. You get an email confirmation and a reminder the day before.
